Day 11: Strawberry Cheesecake Santa’s

Here is what Kaylyn had to say:

These are so cute, they taste delicious and they were easy to make! The recipe called for a fancy piping bag with a star tip, but I used a ziplock bag and cut the corner and it worked out pretty good. These would be a hit at any holiday party or family gathering!

Ingredients:

1 lb fresh strawberries, washed
1 block of cream cheese, softened to room temperature
3 tbsp. powdered sugar (you could use honey as a substitute)
1/2 tsp. vanilla extract
mini chocolate chips to decorate

Directions:

Cut the stem off the strawberry. Try to cut it “flat” as this will be the base.

Cut the top 1/3 of the strawberry, this will be the hat.

I set these in a dish with a lid and put them in the fridge while I made the filling.

In a mixing bowl, beat cream cheese, powdered sugar, and vanille. The mixutre will be thick so it’s best if the cream cheese is at room temperature.

Place cream cheese mixture into a zip bag or piping bag. Snip one corner of the bag off.

Top the strawberry base with the cream cheese mixture. Place the top of the strawberry, the “hat” on top of the mixture. You can then add a little ball of cream cheese mixture to the top of the hat (I forgot this step).

Use the mini chocolate chips for Santa’s eyes. You can add more cream cheese mixture to the front as buttons if you wish. Get creative! Use sprinkles, candy, whatever you want to decorate these little Santa’s. I did try to make little moustaches, there is no wrong way!

Serve immediately! Store in the fridge for up to 3 days.
