Day 9: Nanking Cherry Whiskey

Flavoured Whiskey’s and liqueurs from local fruit are really a very simple, and tasty, way to enjoy the local fruits in your area. This recipe is a family favourite and makes whiskey almost too drinkable.

Although Nanking Cherry was used here, chokecherry, pincherry, sour cherry, saskatoon and raspberry have all been tried and enjoyed by this mad scientist.

This Nanking Cherry Whiskey was made with two types of whiskey to see if there was a difference in flavour for Christmas drinks. There wasn’t much of a difference once the Nanking Cherry was added. The hardest part of this recipe is waiting a month or more for the flavour to improve. It does improve a bit with time.

Recipe:

4 cups whole cherries (Nanking Cherry used here)
1.5 cups sugar (use more or less according to your taste buds and the natural sweetness of the fruit)
Simmer together on medium heat for 20 mins or so. Stir often.

Combine with about 600ml Whiskey (here, the mixture was divided between two whiskeys). Then strain, move to a clean glass jar and imbibe. Leave for a month or two.
