Day 2: Lingonberry (Bog Cranberry) Sauce

This recipe was easy to make! You can substitute ingredients to your liking. I used raspberry jam and ran out of lemon juice so used lemonade instead. It was pretty good actually! The sauce has a strong flavor and is somewhat sour. Would make a good accent to rich cheese with poultry, and would be amazing on turkey.
INGREDIENTS:
2 tablespoons lemon juice (I used Lemonade)
1 bay leaf
3 tablespoons jam or jelly (I used raspberry)
1 cup lingonberries (fresh or frozen)
2 tablespoons brown sugar
1 tablespoon vinegar
DIRECTIONS:
Add the lemon juice, bay leaf, jam or jelly, lingonberries, and sugar to a small saucepan and boil the mixture for 3-4 minutes.
Lower the heat and simmer uncovered for another 5 minutes until the fruit is soft.
Remove the bay leaf, stir in the vinegar, and season with salt and pepper.
Spoon over the meat and serve immediately while hot. Serve & Enjoy!
